Margarita (Hibiscus)
- 500ml of hibiscus tea
- 1 lime
- 300ml simple syrup (1:1) [2:3 ratio of syrup:hibiscus, err on the lower syrup side]
Mix above ingredient together to make hibiscus drink base (makes 19% sugar solution)
- 1 shot tequila
- 1 shot cointreau
- 4 shots hibiscus base
- 50% ice

- 1 litre water (lost about 90ml hydrating hibiscus, top up lost water)
- 30g hibiscus
- 1 lime
- 180 caster sugar
Brew hibiscus in boiled water for 5 minutes, remove hibiscus and top-up lost water Add juice of lime and sugar, bring to boil, then leave to cool (15% sugar solution)

- 150g caster sugar
- 20g hibiscus
- 1g salt
- 600ml water
- 75ml tequila
- 50ml Cointreau
Add water or ice - maybe a bit more sugar
