Margarita (Hibiscus)

  • 500ml of hibiscus tea
  • 1 lime
  • 300ml simple syrup (1:1) [2:3 ratio of syrup:hibiscus, err on the lower syrup side]

Mix above ingredient together to make hibiscus drink base (makes 19% sugar solution)

  • 1 shot tequila
  • 1 shot cointreau
  • 4 shots hibiscus base
  • 50% ice

  • 1 litre water (lost about 90ml hydrating hibiscus, top up lost water)
  • 30g hibiscus
  • 1 lime
  • 180 caster sugar

Brew hibiscus in boiled water for 5 minutes, remove hibiscus and top-up lost water Add juice of lime and sugar, bring to boil, then leave to cool (15% sugar solution)

  • 150g caster sugar
  • 20g hibiscus
  • 1g salt
  • 600ml water
  • 75ml tequila
  • 50ml Cointreau

Add water or ice - maybe a bit more sugar
